Super Creamy Avocado Fudgsicles

As you have probably gathered from my previous posts, I am a chocolate lover! And I have passed this love for dark chocolate on to my son. Maybe it’s because I smothered cocoa butter all over my pregnant belly when I was pregnant and called him my chocolate baby. Needless to say, we both LOVE this recipe for avocado fudgsicles developed by Tasty Yummies. Like the title suggests, they are SUPER creamy and chocolatey and the avocado flavour is very mild. You can also eat this as a pudding and it’s just as divine. In fact, you might not be able to wait for them to freeze.

6 pitted dates

¾ cup water, plus ½ cup

2 ripe avocados

½ cup cocoa powder

3 tbsp maple syrup

½  cup canned coconut milk

¼ tsp of salt

To prepare:

soak dates in ¾ cup water while you get the other ingredients ready. You may need to soak longer if your blender isn’t super powerful like a Vita Mix. Soaking them longer will ensure they are nice and soft and blend until smooth. Then blend with all the ingredients until smooth. Pour into popsicle molds and freeze for 3-4 hours or enjoy right out of the blender.
