These popsicles are a perfectly refreshing treat that can seamlessly replace any sugar-laden “fruit” pop you can find at the store. They are simple to make and you can easily get a serving of veggies into your kids with the spinach. Some kids don’t like to eat green food but these popsicles are lime flavoured, so you almost expect them to be green. They are a crowd pleaser for adults and kids alike.

1 ½ cup pineapple (fresh or frozen)
¾ cup canned coconut milk
1 cup spinach
Zest and juice from 1 lime
Blend all the ingredients together until smooth. Pour into your favourite popsicle molds and freeze for 3-4 hours. This recipe makes 4-6 popsicles depending on the size of your molds.
